Apple Brandy Bundt Cake

Friends, today is a very special day. I am sharing a recipe that is very special to my family with you. It a recipe for my MeMaw’s Apple Brandy Bundt Cake. She would always make this cake around the holidays and I thought it would be extra special if I shared it with you as we enter the holiday season!

I followed her recipe almost exactly. One thing I did modify was soaking the raisins in the brandy before adding them to the batter. This adds moisture to the raisins and the cake. AND THE FLAVOR OF THIS CAKE IS OUTSTANDING!!!

Now I love baking my Apple Brandy Bundt Cake in my Wilton Perfect Results Premium 9-inch Fulted Bundt Pan. It just creates such a beautiful cake without being hard to get out of the pan. Having a non-stick pan and then also buttering/flouring the pan almost guarantees it coming out perfect every time!

Flavor Tips

Now I already mentioned soaking your raisins in the brandy before you bake your cake. (make sure you drain them before adding them to your cake). Here are some other tips. Use a tart, flavorful apple like Granny Smith. This cake is packed with all kinds of fall flavors and you don’t want the apple to get lost.

Always use fresh nuts and taste test your nuts. Make sure to check the date on the bag. Nuts are full of natural oils and can go rancid very easily. You do not want to ruin your cake with bad nuts. (and just think, this is a healthy cake…joking…It is full of fruit and nuts).

If you want to really get ambitious, grate your own nutmeg. I have been doing this for years. The taste so much more vibrant and floral! This is also another use for your MICROPLANE! If you decide to try this you can order whole nutmeg on Amazon or you can pick it up at Fresh Market if you live close to one. Here is a whole orgainc nutmeg from Amazon. BTW…Fresh Market is a great place to buy spices. They sell spices by their market price and weight. They come in plastic zip top bags so you are not paying for the glass bottle.

Apple Brandy Bundt Cake

This old-fashioned apple cake is filled with fall flavors and memories too!

Ingredients

  • 1 ½ cups unsalted butter softened
  • 2 cups sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 3 tsp baking powder
  • 1 tsp salt
  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • 2 cups apples peeled & finely chopped
  • 1 cup pecans chopped
  • ½ cup raisins soaked in apple brandy and drained
  • Glaze ingredients
  • ½ cup apple cider
  • ½ cup apple brandy
  • ¼ cup brown sugar
  • 2 tbsp butter

Instructions

  • Preheat oven to 325 degrees. Prepare Bundt pan or tube pan with butter and flour.
  • Mix together butter and sugar until light and fluffy.
  • Slowly add eggs to butter mixture one at a time. Follow with vanilla.
  • In a separate bowl mix dry ingredient.
  • Then add dry ingredients in batches to wet ingredients. Batter will be thick like a pound cake.
  • Fold in apples, pecans, and raisins.
  • Bake in preheated oven for 1 hour 10 minutes.
  • When cake is finished baking, allow to cool for 20 minutes before removing from pan to cool completely.
  • Prepare glaze while cake cools.
  • Place small saucepan on stove. Mix together glaze ingredients and bring to a simmer. Allow to cook until all sugar is dissolved. Turn off heat and wait to pour over cake until you have cake on serving dish you plan to use. Glaze makes cake moist and delicate!
