Avocado Salsa
Happy Cinco de Mayo! Today I wanted to share with you a super quick, super delicious recipe for Avocado Salsa. This happens to be one of my favorite appetizers to eat on a Friday night. And it was inspired by a Mexican restaurant close to my home.
I loved it there so much I had to come up with a way to recreate it. It only takes a few ingredients and can be whipped up in less than 10 MINUTES!!!

Now I know that you hear me talk about a citrus zester aka a Microplane and a citrus juicer often. And I will stand by my statements on these kitchen tools. They are game changers. You will see me using them once again in this recipe. And once you start using them, you will use them all the time. Citrus is great way to add flavor to your food without adding fat. And the brightness of the acid cuts through an otherwise heavy dish.

I have several other recipes that are perfect for Cinco de Mayo. My Southwest Stuffed Peppers from last week are a great way to save calories without sacrificing flavor. (then you have calories for a festive beverage) I also have a delicious Southwest Avocado Lime Slaw that is a perfect companion to the peppers. What is so amazing about each of these recipes is they are all gluten-free and low-carb.
Avocado Salsa
Ingredients
- 1 16 oz container of fresh salsa Pico type salsa. Heat level of your choice
- 2 ripe avocados
- 2 limes
- Optional ingredient: fresh chopped cilantro
Instructions
- Pour your salsa in a medium bowl.
- Carefully cut your avocado in half and dice small. Add avocado to your salsa.
- Zest one lime into your salsa mixture. Juice both limes into your salsa mixture and stir.
- Add a couple pinches of salt and taste. Adjust seasoning to your liking.
