As we quickly approach Valentine’s day, I wanted to share something a little different with you. My Blackberry Prosecco Cupcakes are guaranteed to be a HUGE HIT with your Love and with you! They are super simple to make (you get to use a cake mix). And they are different, we are using fresh blackberries instead of the traditional strawberry!

Now if you want EXTRA, EXTRA, EXTRA SIMPLE and traditional you can take a look back at my Prosecco Soaked Strawberries. It is a 3-ingredient recipe and it is almost mistake proof!

For the Blackberry Prosecco Cupcakes, we replace the water with Prosecco, the oil with melted butter (can we say double yum), and we use egg whites to keep the cupcakes a pretty white color. Once they are finished cooking, we carve out the center of the cupcake to hide a blackberry in the center of each one as an extra surprise!

Now don’t sweat the decorations. These will taste so good your beloved will not care in the least what they look like. And just so you know, I found the large white chocolate pearls at my local Kroger on the baking Isle. They were $1 a bag.

If you want to decorate yours like I did mine, here is what I did. I fitted my piping bag with a large star tip. Then I filled my bag with icing. I piped the icing on the top of my cooled cupcakes. Then I sprinkled my cupcakes with white sprinkles, added a few white chocolate pearls and a fresh blackberry on top.

Ingredients

  • 1 box white cake mix
  • 1 1/4 c Prosecco
  • 1/3 c melted butter
  • 3 egg whites
  • Icing
  • 1/2 c unsalted butter softened
  • 4 c powdered sugar
  • 1/4 c prosecco
  • 1 tsp vanilla
  • 1- pint fresh blackberries

Instructions

  • Line cupcake pan with cupcake liners. Preheat oven to 350 degrees.
  • In a large bowl mix together cake mix, prosecco, melted butter and egg whites.
  • Fill cupcake liners evenly and bake 15-17 minutes or when a toothpick inserted into the middle of a cupcake comes out clean.
  • While cupcakes bake, make icing.
  • In separate bowl mix softened butter until light and fluffy. Alternate powdered sugar and prosecco. Starting with powdered sugar. Finish with vanilla. Icing can be stored in the refrigerator until cupcakes cool.
  • When cupcakes are finished baking, allow them to cool for 10 minutes in the pan. Then move them to a cooling rack. Allow them to cool completely.
  • Next, use a large frosting tip or a paring knife to remove the center of the cupcake. Make just enough room for one large blackberry.
  • Finally, Frost and decorate your cupcakes. Ending with another fresh blackberry on top.
