Cajun Dirty Rice w/ Chicken and Andouille Sausage
Today I wanted to share a new recipe with you. It is for Cajun Dirty Rice w/ Chicken and Andouille Sausage. You may remember that I have already shared a Creole Dirty Rice recipe with you. Today, I wanted to give you a new variation. One major difference is tomatoes. And if you study the cuisines you will see tomatoes separate the two distinctions.
I had some Andouille Sausage that my oldest son Luke had brought home from a butcher shop in Chattanooga. And I finally got around to using it. It was perfect for this recipe. Cajun Dirty Rice is a great way to feed a crowd, it is a wonderful comfort food, and you can vary the ingredients depending on what you have on hand.
As you compare Cajun Dirty Rice w/ Chicken and Andouille Sausage with my regular Cajun Dirty Rice recipe, the thing I want you to see is how versatile it is as a dish.
The Basics
You really only need to remember a few things. You need a protein or two. Preferably one with some natural fat in it. That way you can cook your vegetables in that fat. It also coats your rice before you cook it.
Add whatever vegetables you have on hand. Examples would be: onions, bell peppers, celery, and tomatoes (make it technically Creole).
Use a flavored liquid for your rice. Any flavor of stock or broth will work. I usually use chicken.
And rinse your rice at least 3 times. What I mean by this is place your rice in bowl and fill it with water. Gently stir the rice with your hand and drain. Do this at least three times before you cook it. You will be surprised how much will come out of your rice.
Cajun Dirty Rice w/ Chicken and Andouille Sausage
Ingredients
- 1 lb. andouille sausage
- 1 medium onion diced
- 1 bag frozen peppers thawed
- 3 cups chicken cooked and shredded
- 2-3 tbsp Cajun seasoning
- 2 cups jasmine rice
- 3 cups chicken stock
- Green onions
- Hot sauce
Instructions
- In a 6-quart Dutch oven, over medium high heat. Brown your andouille sausage. Once your sausage has rendered some of it’s fat, add your onions and peppers.
- Cook your onions and peppers 4-5 minutes. Add Cajun seasoning to vegetables while they cook.
- Stir in chicken and heat through. Once Chicken is heated through stir in rice.
- Once rice is mixed in, add chicken stock. Bring to a boil, cover with a lid and reduce to a simmer. Cook for 15 minutes.
- Remove from heat after 15 minutes. Allow to stand for 5 minutes then fluff with a fork and serve.
- Garnish with green onions and hot sauce
