It seems the more I limit my sugar intake the more I want to bake! These Lemon Blueberry Bars are evidence of that. I grew up with my mother making Lemon Bars out of a box mix. And I wanted to elevate that just a bit.

Making the Lemon Blueberry Bars is one of the simplest recipes I have ever baked. There are a few things that make them even better. So, let’s talk about it.

Elevate Your Flavor

There are 3 things you can do to elevate the flavors of your Lemon Blueberry Bars. First, use good butter. Don’t substitute oil for the butter. The nutty flavor the butter lends to these bars is so special.

Second, juice and zest your own lemons. I have linked my favorite citrus juicer and zester several times on here. Once you purchase these two tools, you will realize how much you can use them in your kitchen.

Finally, use fresh blueberries if you can. They taste amazing with the lemon filling. And the fresh berries will not mix as much purple juice into your lemon filling. It makes for a prettier finished product.

Old Recipes

Now this is an old recipe that I elevated just a little. The blueberries really take it over the edge. And this dessert would be fantastic for a shower or Spring Dinner Party.

Recently I have shared a few other old recipes here. I will have to say my favorite is the Hummingbird Cake. It may not be as pretty as the Lemon Blueberry Bars, but it makes up for it’s looks with AMAZING FLAVOR!

Lemon Blueberry Bars

Ingredients

  • Crust:
  • 1 cup butter melted
  • ½ cup powdered sugar
  • 2 cups sifted flour
  • ¼ teaspoon salt
  • Blueberries
  • 2 cups fresh blueberries
  • 3 tbsp powdered sugar
  • 2 tbsp fresh lemon juice
  • Topping:
  • 4 eggs beaten
  • 4 tablespoons sifted flour
  • 2 cups granulated sugar
  • 5 tablespoons lemon juice
  • tablespoons grated lemon rind

Instructions

  • Preheat oven to 350 degrees. In a large bowl mix melted butter, flour, powdered sugar, and salt.
  • Press dough into 9×13 casserole dish. Bake for 20 minutes
  • In a small bowl, mix blueberries, powdered sugar & lemon juice together. Set aside
  • In a large bowl, mix eggs, flour, sugar, lemon juice and lemon zest.
  • Once crust is baked pour lemon mixture over crust.
  • Add blueberries all over lemon filling and bake for 25 minutes.
  • When cool, sprinkle with powdered sugar and cut into squares.
  • Makes 24 small squares
