Rice Krispie Sweet Potato Casserole
Friends, if you have followed me for a while, you might be used to my crazy recipe ideas by now. Well, I have another one for you, just in time for Thanksgiving. Today I want to share my Rice Krispie Sweet Potato Casserole. Now you might be scratching your head thinking, WHAT??? Rice But you heard me right. This is a sweet potato casserole topped with Rice Krispie Treats!
What I am sharing is the base recipe for my family’s favorite Sweet Potato Casserole. I modified it to fit an 8×8 pan. You can easily double this if you need to! And then I topped it with homemade Rice Krispie Treats. The key is the fact that these sweet potatoes are not too sweet.
Now as you prepare for your Holiday Celebrations, you can make the sweet potato portion of your Rice Krispie Sweet Potato Casserole ahead of time. You can even freeze it. Make sure to defrost it a few days ahead and bake for an hour to get it up to temperature. Remove it from the oven and top with your Rice Krispie Treat topping and bake another 10 minutes.

Rice Krispie Sweet Potato Casserole
Ingredients
- 3 lbs sweet potatoes
- 3 ½ tbsp butter divided
- ¼ cup orange marmalade
- 2 tbsp brown sugar
- 1 tsp salt
- ½ tsp ground ginger
- 2 ¼ c mini marshmallows
- 3 cups Rice Krispie cereal
Instructions
- Preheat oven to 400 degrees. Spray 8×8 glass or ceramic dish with cooking spray.
- Wash sweet potatoes and bake on sheet tray for 1 hour until cooked through.
- After an hour remove potatoes from the oven. Once they are cool enough to handle. Peel them and place in a medium size bowl and mash.
- Add 2 tbsp butter, marmalade, brown sugar, salt, and ginger to sweet potatoes and mix well.
- Place sweet potato mixture in prepared dish.
- Reduce oven temperature to 350 degrees.
- In microwave safe bowl, melt 1 ½ tbsp butter.
- Add marshmallows to melted butter. Mix and melt in microwave in 30 second increments as needed to make smooth.
- Add Cereal and mix. Top sweet potato mixture with cereal mixture. Spread evenly.
- Bake for 10 minutes. Serve
