Slow Cooker Mexican Chicken & Rice
In the spirit of easy weeknight meals for busy families. Let me start with this Slow Cooker Mexican Chicken & Rice. I was given this recipe many years ago, while in the middle of raising two small boys. I can tell you it will satisfy picky children and hungry adults alike.
Now as you look over the recipe you will see it only really cooks for 5 hours. And you might be thinking, “I can’t make this on a workday” or “How do I get the timing right for dinner”. Don’t panic, there are several ways to handle all of those questions and more.
Time Assisting Tools
First, you can buy a slow cooker that has a timer so that it starts and stops at a particular time. That is the simplest way to approach it. Here is a 7-quart model from Crock Pot on Amazon for $49.99. That is an AMAZING deal. If you have a large family this would be perfect. And if you have boys, you will need the larger one in time! This recipe easily doubles.
Another idea is a plugin timer like you use for lamps when you travel. They are so simple to use and can be used for multiple appliances (or lamps) in your home. This GE model from Amazon is only $7.95.
Finally, you can prepare this on your day off. This makes great leftovers. Drizzle it will a little water before you reheat it and it will like you just made it.
Feeding Picky Children
Now if you look at photos of Slow Cooker Mexican Chicken & Rice and think “my kid will never eat that”, maybe that is true. However, let me share with you some of the tips and tricks I used to get my boys to eat new, unfamiliar things.
For example, we had finally established that they liked tacos. So, every dish became Taco _______. By that I mean every dish was renamed Taco something and had a little taco seasoning in it so it tasted familiar. Also, if it looked weird or the consistency was not to their liking, I would put it in a taco shell. And blanket it with cheese. Now obviously this didn’t work with lasagna, but it worked with chili and a few other dishes. That is how both my son’s came to love Slow Cooker Mexican Chicken & Rice.

Slow Cooker Mexican Chicken & Rice
Ingredients
- 2 large boneless chicken breasts
- Olive oil
- 1 tbsp onion powder
- 2 tsp garlic powder
- 1 tbsp ancho chili powder
- 2 tsp cumin
- 1 tsp salt
- 3 cups chicken broth
- 1 15 oz can diced tomatoes
- 1 14 oz can black beans drained and rinsed
- 2 ¾ cups instant brown rice
- 1 ½ -2 cups shredded Colby Jack cheese
Instructions
- Place your chicken breasts in the bottom of your slow cooker. Drizzle with olive oil and cover in your spices.
- Pour in your chicken broth and tomatoes. Stir to combine broth and tomatoes.
- Cover slow cooker and cook on low for 4 hours.
- After 4 hours, remove chicken to a plate. Turn slow cooker to high, add black beans and rice.
- Allow to cook on high for 30-40 minutes. Until rice is tender.
- Shred chicken while rice cooks. Once rice is finished add chicken back to the slow cooker. Stir and top with cheese.
- Allow to cook for another 10 minutes to melt cheese.
- Serve with your choice of toppings.
