And what makes these two side dishes even more perfect is how simple they are to make!

Ultimate Valentines Dinner In: Side Dishes

Pancetta wrapped Asparagus and Roasted Campari Tomatoes are the perfect compliment to a butter basted Steak

Ingredients

  • 8 oz thinly sliced pancetta
  • 1 lb fresh asparagus
  • Fresh ground black pepper
  • 1 lb Campari tomatoes
  • Olive oil
  • Salt

Instructions

  • Preheat oven to 425 degrees
  • Wash and dry Asparagus
  • Snap stem ends off of asparagus where it easily breaks. (demo in my video)
  • Cut each slice of pancetta in two and wrap each stem of asparagus in one piece of pancetta
  • Make an aluminum foil “pan in a pan” for your roasted tomatoes.
  • Wash your tomatoes and arrange them on your foil.
  • Drizzle them with olive oil and roll them to coat with oil
  • Roast vegetables for 10-11 minutes while you cook your steaks.
  • Sprinkle your tomatoes with a pinch of salt when they come out of the oven.
