Grandma’s Banana Muffins with Chocolate Chips
I never met my Grandmother Lena. She passed away long before I was born. However, my mother was always so proud of her recipe for Banana Bread. Here I have made it into Grandma’s Banana Muffins with Chocolate Chips. I often make muffins instead of bread. I like the fact that it cooks faster and it is portioned out evenly. With a family of all boys, a loaf of banana bread could easily be sliced in half and claimed and “mine”! Those of you with growing boys understand what I am talking about!
As I mentioned in my Facebook live video, I walked into my kitchen and saw a bunch of bananas that were very ripe and I was inspired to share a little of my family history with you. These muffins are great for breakfast, brunch, or with coffee for an afternoon snack. And I had to add chocolate chips, because everything is better with chocolate.
Grandma’s Banana Muffins with Chocolate Chips are so simple and come together so easily. And what is great they use ingredients you probably have in your pantry and refrigerator already. I like to use a cookie scoop to portion out my batter to get consistent muffins. I love my cookie scoops and use them for muffins, cupcakes, & meatballs. Grandma’s Banana Muffins with Chocolate Chips
Ingredients
- ¾ cup unsalted butter softened
- ½ cup sugar
- 2 eggs
- 4 ripe bananas
- 2 cups all-purpose flour
- ¾ tsp salt
- 1 tsp soda
- 1 tsp vanilla
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 375 degrees.
- Cream together butter and sugar. Add eggs and mix until combined.
- Add mashed bananas and mix well.
- In a separate bowl whisk together flour, salt, and soda.
- Mix dry ingredients to butter mixture.
- Mix in vanilla and fold in chocolate chips.
- Fill muffin cups with batter and bake for 20-22 minutes.
