Mini Berry Crisps
As we move into a season of weddings, showers, brunches and all of those fun events I wanted to share a fun idea with you. My Mini Berry Crisps are a great individual dessert for any buffet. They are so pretty and look great displayed on a multi-tiered display.
Single serve desserts are a great way to personalize an event. And they make a buffet easy to serve. No need for a cake cutter! You can make them the day before and they will still be delicious the day you serve them. Just top them off with a sprig of fresh mint.
I love how easy these are to make. No fussy crust to deal with. Just the filling and the crumble topping. Another thing I love about the Mini Berry Crisps is how simple it is to make the recipe Gluten-free. I just exchanged AP Rice Flour for the standard wheat and they turned out so delicious.
The mini pie plates are very economical at $1.99 a dozen at my local Hobby Lobby. And 6 fit on a ½ sheet pan. I also found these on Amazon in packs of 50 for $9.99. That way if you do not live near a Hobby Lobby. Or if they are sold out, this is an option for you. This recipe is simple to multiply depending on how many people you are expecting.
Mini Berry Crisps
Equipment
- Mini Pie pans
Ingredients
- 3 c frozen mixed berries
- 1/4 c all-purpose flour I used AP rice flour
- ¼ c sugar
- ½ tsp salt
- ½ tsp vanilla
- 1 c old fashioned rolled oats
- 1 c all-purpose flour I used AP rice flour
- 1 c sugar
- 2 tsp cinnamon
- ½ c butter melted
Instructions
- Preheat oven to 350 degrees. Prepare mini pie pans by spraying them with non-stick spray. Arrange pie pans on a cookie sheet to catch any drips from baking.
- In a medium size bowl, mix berries, 1/4c AP flour, 1/4c sugar, salt and vanilla.
- Mix berry mixture well and divide between 6 mini pie dishes.
- In a separate bowl mix next 5 ingredients. Stir to combine.
- Divide your crumble mixture over the top of your berry mixture.
- Bake in oven for 40 minutes.
Notes
*And you can use a mixture of granulated sugar and brown sugar in your crumble topping if you like. Use 1/2c of each.
