Cajun Grilled Corn from Grill of Victory
Hi friends, I am so glad you stopped by. Today I am sharing my recipes from my appearance on Food Network’s Grill of Victory. Right now, I want to share with you my Cajun Grilled Corn from Grill of Victory. I served this with my Bayou Burger from Grill of Victory in the first round of competition.
Grilled corn is a simple, yet delicious side dish that is perfect for any summer cookout. It has a light sweetness, with a fresh and refreshing summertime taste that you can only get from fresh corn on the cob.
One of the things that makes this so easy is that you use the same Garlic/Lemon Aioli from my Bayou Burger from Grill of Victory on the corn.

Tips For Grilling The Corn
Here a few things to remember as you are grilling the corn. Make sure you brush your corn with olive oil before adding your Cajun seasoning. You can find my recipe for Homemade Cajun Seasoning here. This will allow the seasoning to stick and it will help your corn to not dry out while it is grilling. Also, grill your Cajun Grilled Corn from Grill of Victory over medium – medium high heat. You want your corn to develop some dark brown char marks but you do not want your corn to dry out. Turn the corn frequently so that it cooks on all sides.
After your corn has finished cooking, move your corn to a serving tray. Add your Aioli, cheese and a fresh squeeze of lime. Cajun Grilled Corn from Grill of Victory
Ingredients
- 6 ears Corn on the cob
- Cotija cheese
- 1 lime
- Garlic/Lemon Aioli
- 2 cloves garlic chopped
- 2 room temperature eggs
- Dijon Mustard
- Lemon Juice
- Crystal Hot Sauce
- olive oil
- Salt & Black Pepper to taste
Instructions
- Clean your corn on the cob. Heat grill or grill pan to med-high heat.
- Brush corn with olive oil and place on grill.
- While corn cooks make your Aioli.
- In a food processor or blender mix garlic and next 4 ingredients until well blended and smooth. While machine is running (lid on) slowly drizzle in ½ cup olive oil until well incorporated. Season to taste with salt and black pepper.
- Flip your corn so that it cooks evenly on all sides.
- After corn is cooked on all sides, remove to a serving tray. Top with Aioli and crumbled Cotija Cheese. Sqeeze fresh lime juice over the top.
