Cake Pan Deep Dish Pizza
Hi friends, have you ever had the pleasure of tasting an original Chicago Deep Dish Pizza? Well, if you love the real thing do I have a treat for you! A few days ago, I created a Cake Pan Deep Dish Pizza. You make it in a standard 9×13 cake pan.
I was looking to create a dish that everyone could make at home. A comfort food that did not require any special tools. And let me tell you this, Cake Pan Deep Dish Pizza is worth EVERY SINGLE SECOND of effort to make the dough. It is not difficult. And I am a reformed yeast killer. I actually share my secret method for getting yeast to bloom in my recipe below.
Now my recipe calls for mixing your dough in a stand mixer with the dough hook attachment. You do not have to have this machine to make this pizza. First of all, use a large bowl and a sturdy spoon like a wooden spoon or your hand. Just oil your hand. You only mix it for 90 seconds. (200 years ago, people made leavened bread and they did not have stand mixers.) Bake on my loves! Second, my Kitchenaid was a gift many, many years ago from a friend that has since died. Before that I had a Sunbeam. Anything will work. That is my point. This is food. Please do not walk away from a recipe because you think you don’t have what you need.
Please do not skimp on the butter and olive oil in this dish. Deep Dish Pizza is not a low-calorie dish. We can all have salad for our other meals. If you want this to be most like the real thing you need the butter and olive oil in the bottom of your cake pan. Of course, you can use whatever toppings you prefer. All you need to remember is the order of the toppings. The layers always need to go dough, cheese, toppings and then sauce.

Cake Pan Deep Dish Pizza
Ingredients
- Dough Ingredients
- 1 tsp sugar
- 1 ½ tsp active dry yeast
- 11 oz warm water 80-100 degrees
- 2 ¾ c bread flour
- 1/8 tsp cream of tartar
- 1 ¼ tsp salt
- 1/3 c olive oil
- Sauce Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- ½ small onion
- 4-5 cloves garlic minced
- ½ tsp Italian seasoning
- ¼ tsp red pepper flake
- 1 tbsp honey
- Salt and pepper to taste
- 28 oz can crushed tomatoes
- Toppings
- 1 lb. bulk Italian sausage
- 8 oz large pepperoni
- 1 lb. shredded mozzarella cheese

- Pizza dough
- To start your dough, microwave some water in a microwave safe container for 4-5 minutes. This will create a warm environment for your dough to rise in. (My secret to dough rising in a cold house)
- Measure 11 oz of warm water into a large measuring cup or medium size bowl. Test the temperature of the water with a thermometer. Then add yeast and sugar. Mix well and place in warm microwave for 10-15 minutes.
- While your yeast blooms mix your flour, salt, and cream of tartar in the bowl of your stand mixer. If you don’t have one you can use a large bowl and a sturdy spoon. WE ONLY MIX THIS DOUGH FOR 90 SECONDS.
- Oil another large bowl for the dough to rise in. (it needs to fit in the microwave. Your secret hot box for perfect pizza dough!)
- Once your yeast has bloomed, add it to your flour mixture. Start mixing and add your 1/3 cup olive oil. Mix with the dough hook attachment for 90 seconds. If you are hand mixing, you are looking for this to form a dough ball and all of the flour to be incorporated.
- After 90 seconds, turn off the mixer. Remove dough from mixing bowl and move to oiled bowl. Turn over once to coat dough with olive oil. Cover bowl with a towel and place in warm microwave.
- Allow dough to rise until doubled. About 1 hour.
- While the dough rises start the sauce.
- Sauce
- Place a medium sized sauce pan over medium heat.
- Add your olive oil and butter.
- Next add your minced onion and garlic.
- Once your onions are translucent add your next 5 ingredients.
- Stir well, reduce to low and cover. Allow to simmer.
- Assembly
- Preheat your oven to 450. Place 2-3 tbsp olive oil and 2-3 tbsp melted butter in the bottom of a 9×13 cake pan.
- Once your dough has doubled in size transfer it to your prepared cake pan.
- Press your dough to the edges and up the sides of the pan.
- Cover the dough with mozzarella cheese.
- Press Italian sausage between two pieces of plastic wrap. Remove once piece. Transfer sausage (uncooked) to pizza, and remove other piece of plastic wrap.
- Top sausage with pepperoni and then with sauce.
- Place on bottom rack of oven. Bake for 25 minutes. Rotate ½ way through baking.
