Ingredients

  • 1 tsp sugar
  • 1 ½ tsp active dry yeast
  • 11 oz warm water 80-100 degrees
  • 2 ¾ c bread flour
  • 1/8 tsp cream of tartar
  • 1 ¼ tsp salt
  • 1/3 c olive oil
  • Sauce Ingredients
  • 1 tbsp olive oil
  • 1 tbsp butter
  • ½ small onion
  • 4-5 cloves garlic minced
  • ½ tsp Italian seasoning
  • ¼ tsp red pepper flake
  • 1 tbsp honey
  • Salt and pepper to taste
  • 28 oz can crushed tomatoes
  • Toppings
  • 1 lb. bulk Italian sausage
  • 8 oz large pepperoni
  • 1 lb. shredded mozzarella cheese

  • Pizza dough
  • To start your dough, microwave some water in a microwave safe container for 4-5 minutes. This will create a warm environment for your dough to rise in. (My secret to dough rising in a cold house)
  • Measure 11 oz of warm water into a large measuring cup or medium size bowl. Test the temperature of the water with a thermometer. Then add yeast and sugar. Mix well and place in warm microwave for 10-15 minutes.
  • While your yeast blooms mix your flour, salt, and cream of tartar in the bowl of your stand mixer. If you don’t have one you can use a large bowl and a sturdy spoon. WE ONLY MIX THIS DOUGH FOR 90 SECONDS.
  • Oil another large bowl for the dough to rise in. (it needs to fit in the microwave. Your secret hot box for perfect pizza dough!)
  • Once your yeast has bloomed, add it to your flour mixture. Start mixing and add your 1/3 cup olive oil. Mix with the dough hook attachment for 90 seconds. If you are hand mixing, you are looking for this to form a dough ball and all of the flour to be incorporated.
  • After 90 seconds, turn off the mixer. Remove dough from mixing bowl and move to oiled bowl. Turn over once to coat dough with olive oil. Cover bowl with a towel and place in warm microwave.
  • Allow dough to rise until doubled. About 1 hour.
  • While the dough rises start the sauce.
  • Sauce
  • Place a medium sized sauce pan over medium heat.
  • Add your olive oil and butter.
  • Next add your minced onion and garlic.
  • Once your onions are translucent add your next 5 ingredients.
  • Stir well, reduce to low and cover. Allow to simmer.
  • Assembly
  • Preheat your oven to 450. Place 2-3 tbsp olive oil and 2-3 tbsp melted butter in the bottom of a 9x13 cake pan.
  • Once your dough has doubled in size transfer it to your prepared cake pan.
  • Press your dough to the edges and up the sides of the pan.
  • Cover the dough with mozzarella cheese.
  • Press Italian sausage between two pieces of plastic wrap. Remove once piece. Transfer sausage (uncooked) to pizza, and remove other piece of plastic wrap.
  • Top sausage with pepperoni and then with sauce.
  • Place on bottom rack of oven. Bake for 25 minutes. Rotate ½ way through baking.
