Citrus Orzo Salad
This bright citrus salad tastes just like summer in your mouth. My Citrus Orzo Salad is the perfect side dish to accompany any meal all Spring and Summer long. It comes together in a flash so you can mix it ahead and serve it cold for lunch or dinner as well.
I featured this salad with my Chicken Piccata recipe. We did a Facebook live video featuring both of them. And we will continue to do these fun videos as long as we are on our “safer at home” orders or “quarantine”. I hope that you are able to join us and find these encouraging and fun.
The great thing about paring the Citrus Orzo Salad with the Chicken Piccata is that you can use some of the same ingredients in both. One lemon will be plenty for each of the recipes and the freshness and brightness that it brings is such a welcome burst of flavor after all of the “pantry eating” we have been doing.
This salad would also be great paired with a wrap or sandwich. And with Spring upon us, you could have a picnic in your own backyard! I think at this point some sunshine and fresh air would be great for all of us!
Tools I Love
Now you may have noticed me use a Microplane to zest my lemon and Lemon Juicer. These are two tools I have had in my kitchen for years and use often. I have found that my lemon juicer gets quite the workout with limes as well. Amazon has a great Metal Juicer by Rassedirect for $14.49. I prefer the metal one because of the force you have to use to press the juice out of the fruit. And it will last forever!
Amazon also has a Microplane just like the one I used in my video it is only $14.70. This is a super handy tool that you can use for parmesan cheese, grating fresh nutmeg, and zesting all kinds of citrus fruits.
Citrus Orzo Salad
Ingredients
- 2 cups cooked orzo pasta
- ½ cup frozen peas thawed
- 1/3 cup crumbled feta
- 1 tbsp olive oil
- ¼ tsp salt
- ¼ tsp black pepper
- Lemon zest
- Squeeze fresh lemon juice
Instructions
- Cook Orzo according to package directions for Al Dente pasta.
- Toss pasta with olive oil, feta, salt & pepper.
- Once the pasta has cooled slightly mix in feta, peas, lemon zest, & squeeze lemon juice over top. Mix well.
