Citrus Orzo Salad
Bright & Light Salad bursting with citrus flavor
Prep Time 20 minutes minutes
- 2 cups cooked orzo pasta
- ½ cup frozen peas thawed
- 1/3 cup crumbled feta
- 1 tbsp olive oil
- ¼ tsp salt
- ¼ tsp black pepper
- Lemon zest
- Squeeze fresh lemon juice
Cook Orzo according to package directions for Al Dente pasta.
Toss pasta with olive oil, feta, salt & pepper.
Once the pasta has cooled slightly mix in feta, peas, lemon zest, & squeeze lemon juice over top. Mix well.
