Citrus Orzo Salad

Ingredients

  • 2 cups cooked orzo pasta
  • ½ cup frozen peas thawed
  • 1/3 cup crumbled feta
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Lemon zest
  • Squeeze fresh lemon juice

Instructions

  • Cook Orzo according to package directions for Al Dente pasta.
  • Toss pasta with olive oil, feta, salt & pepper.
  • Once the pasta has cooled slightly mix in feta, peas, lemon zest, & squeeze lemon juice over top. Mix well.
