Firey Grilled Chicken

Friends, Firey Grilled Chicken will be the easiest you have ever made! I know this to be true! Way back when I started Weight Watchers over 20 years ago I learned one fundamental truth, the flavor is either going to come from fat or spice. And this chicken is the perfect example of that principle. It is SUPER FLAVORFUL, with a hit-you-in-the-mouth kind of taste! And it utilizes 3 of my favorite spice blends.

First (before giving a detailed recipe for Firey Grilled Chicken), let’s talk about Rufus Teague. Honey, just trust me on this, everything Rufus makes is DELICIOUS! Here I used Rufus Teague Steak Rub because that is the blend I had on hand. I have also used the Meat Rub in this same recipe and it works just as well. If you can’t find Rufus Teague’s products you can refer to my Homemade Montreal Seasoning Blend recipe. It is a great option here as well. Next, you will see Lemon Pepper. I Prefer McCormick’s brand so that is what I linked here. Finally, you will see Tanjin  you may not be familiar with this spice blend. However, once you try it, you will LOVE IT! (If you look for it in your local grocery store it may be in the international isle with the Latin Food).

Ingredients

  • 4-6 boneless skinless chicken breasts
  • 1 1/2 tsp Rufus Teague Steak Rub Seasoning Blend
  • 3/4-1 tsp lemon pepper
  • 1 1/2 tsp Tanjin Clasico Seasoning Blend

Instructions

  • 1.Place chicken breasts on a sheet tray to rest for 30 minutes. Sprinkle evenly on both sides
  • with all three seasonings. Prepare Grill.
  • 2.Heat Grill to medium, medium-high heat. Make sure grill grates are clean. If you do not have an outdoor grill you can use a grill pan on the stove. Heat it over med-high heat.
  • When the chicken has rested for 30 minutes, place it on your hot grill. Wait 5 minutes before attempting to turn it. Wash your pan or get a new one. (we want to be food-safe!)
  • After 5 minutes turn your chicken and wait another 5 minutes. The total cook time for your Firey Grilled chicken should be 20-25 minutes depending on the thickness of your chicken. Check the temperature of your meat with a meat thermometer. It needs to read over 155 degrees in the largest/thickest part, of the biggest piece of chicken you have. I SAY 155 DEGREES BECAUSE IT WILL CONTINUE TO COOK AFTER YOU TAKE IT OFF OF THE GRILL. ESPECIALLY IF YOU COVER IT WITH FOIL AND LET IT REST 10 MINUTES BEFORE SERVING.
