Food Prep: Roasted Sweet Potatoes
Hi friends, today I wanted to share another simple and delicious food prep recipe – Roasted Sweet Potatoes. I make this often for my student-athlete, but this is ideal if you are trying to incorporate more complex carbohydrates into your diet. Food prep really is one of the small steps that reap big rewards over the long run. Of course, this recipe is great as a weeknight side dish as well. It cooks quickly and only has a few ingredients. I mentioned in the video how much I love my serrated peeler. I love mine because it makes peeling thick-skinned vegetables like sweet potatoes much easier. Here is one I found that I think you will enjoy in your kitchen.

Why Roasted Sweet Potatoes?
One of the things that make Roasted Sweet Potatoes so great is the fact that it allows the natural flavors of the sweet potatoes to shine through. And you are not adding a bunch of extra calories with butter, sugars, etc. The small amount of natural honey you are adding has natural health benefits so you are getting a bonus when you use it!

Food Prep: Roasted Sweet Potatoes
Ingredients
- 3 pounds of sweet potatoes washed, peeled, & sliced 1/4 inch thick
- 3-4 tbsp. avocado oil
- 1 tsp pink Himalayan salt
- 1 tsp cinnamon
- 2-3 tbsp. raw honey
Instructions
- Preheat your oven to 450. Line your sheet pans with parchment paper.
- Wash, peel, and slice your sweet potatoes 1/4 inch thick. Arrange your potato slices in a single layer on your parchment lined pan.
- Drizzle your potato slices with avocado oil and brush slices with a pastry brush to evenly coat. Sprinkle with salt and cinnamon. Bake for 20 minutes.
- Drizzle baked potato slices with raw honey. Store in containers for the week or serve immediately.
