Food Prep: Roasted Sweet Potatoes
A simple and delicious make ahead recipe for Sweet Potatoes. Great for Food Prep or as a side dish

- 3 pounds of sweet potatoes washed, peeled, & sliced 1/4 inch thick
- 3-4 tbsp. avocado oil
- 1 tsp pink Himalayan salt
- 1 tsp cinnamon
- 2-3 tbsp. raw honey
Preheat your oven to 450. Line your sheet pans with parchment paper.
Wash, peel, and slice your sweet potatoes 1/4 inch thick. Arrange your potato slices in a single layer on your parchment lined pan.
Drizzle your potato slices with avocado oil and brush slices with a pastry brush to evenly coat. Sprinkle with salt and cinnamon. Bake for 20 minutes.
Drizzle baked potato slices with raw honey. Store in containers for the week or serve immediately.
