GiGi’s Baked Rice
As you may have guessed by the name this is a tribute recipe. My husband’s grandmother, affectionately known by so many in the family as “GiGi”, made her own version of baked rice. As I was learning to cook and started my own kitchen traditions, I created my own version of GiGi’s Baked Rice in her honor. It is the perfect compliment to my Red Beans and Rice in my previous post. And they are both great options for comfort food that is easy, accessible, and budget friendly during this difficult season many of us are facing during this Covid-19 crisis.
I hope that during this time of uncertainty you are able to have time with your family and enjoy a few meals around the table. Simple things like GiGi’s Baked Rice can round out many different meals and use a pantry staple that I hope you have been able to find in your grocery store.
This no-fail recipe is so easy and there are only a few things to remember. You need a 4-5-quart casserole dish with a lid. I found one from Le Creuset that is 4-quart on Amazon. It is similar to the one I used in my Facebook Live video. I love it so much and the colors are so cheerful! And it makes clean up so easy if you spray the dish with non-stick spray before you start. The other KEY THING TO REMEMBER IS THIS…Your broth needs to be HOT when you mix your ingredients together and put it in the oven. If your broth is not hot your rice will not cook in the 50 minutes it is in the oven.
As I showed you in the Facebook Live video, this recipe is great with the Red Beans recipe. However, this would also be great with my Tangy Skillet Chicken with Tomatoes. The Rice would soak up all of the sauce from the tomatoes and be so good!
GiGi’s Baked Rice
Ingredients
- 2 cups of Jasmine Rice rinsed until water runs clear
- 3 cups chicken stock heated
- 3-4 tbsp salted butter
- ½ medium onion diced
Instructions
- Heat oven to 350 degrees. Spray a 4-5-quart covered casserole dish with non-stick cooking spray.
- Rinse rice with cold water until water runs clear. Place rice in casserole dish.
- Add butter, onion, and hot chicken stock. Stir until all ingredients are mixed together and rice is moving freely in stock.
- Place lid on casserole dish and bake for 50 minutes.
- Remove from oven and fluff with a fork.
- Place a scoop of rice in center of a bowl and top with red beans.
