A no fail baked rice dish packed with flavor! Comes out fluffy and delicious!

Ingredients
2cupsof Jasmine Ricerinsed until water runs clear
3cupschicken stockheated
3-4tbspsalted butter
½medium oniondiced
Instructions
Heat oven to 350 degrees. Spray a 4-5-quart covered casserole dish with non-stick cooking spray.
Rinse rice with cold water until water runs clear. Place rice in casserole dish.
Add butter, onion, and hot chicken stock. Stir until all ingredients are mixed together and rice is moving freely in stock.
Place lid on casserole dish and bake for 50 minutes.
Remove from oven and fluff with a fork.
Place a scoop of rice in center of a bowl and top with red beans.

This recipe is in memory of my husbands Grandmother GiGi. She made a baked rice dish very similar. I modified it just a little for ingredients I often have in my kitchen and our family really enjoys it. I hope yours does as well! XO Lara
