Lemon Bread

As I dream of warmer days and Spring on the horizon, I had to share this Lemon Bread Recipe with you. Bursting with fresh lemon flavor, courtesy of fresh lemon juice and lemon zest, it is a real taste treat.
As a dessert bread, my Lemon Bread Recipe will remind you of a Lemon Pound Cake. It has a lovely texture. And since it only uses fresh ingredients for flavor, it is a taste delight!

Tools Needed
We have talked about some of these tools before, but I know I have some new followers, so I wanted to share these again. You need a good way to zest your citrus fruit without getting the pith (white part of skin). This keeps your dishes from getting that bitter taste we are all too familiar with. I recommend a Microplane. They are not terribly expensive and you will find that you use them more often than you realize. Right now they are $15.99 on Amazon. I have owned 2 in my life. They last a long time if you take care of them.

I also suggest a manual citrus juicer. I find it hard to squeeze all of the juice out of any citrus with just my hands. So when I am making my Lemon Bread, salsa, or some other recipe that requires citrus juice I always use my hand juicer. Amazon has one similar to mine for $10.99. Yellow citrus juicer.

This Lemon Bread recipe also makes a big loaf. So make sure you have a loaf pan that is 9″x5″x3″. Basically, if you have two, use the bigger one. Amazon actually has a set of three non-stick loaf pans perfect for this recipe for $15.49. At that price you can give a loaf of Lemon Bread with the pan as a gift if you want to. It would make a wonderful house warming gift!

Lemon Bread
Ingredients
- 3/4 c butter room temp
- 1 1/2 c sugar
- 3 eggs
- 2 1/4 c all-purpose flour
- 1/4 tsp salt
- 1 tbsp baking powder
- 3/4 c buttermilk
- Zest of one lemon
- 2 tbsp fresh lemon juice
- 1 c powdered sugar
Instructions
- Prep 9x5x3 inch loaf pan with butter & flour. Preheat oven to 325
- Cream together butter & sugar. Once well combined, add eggs one at a time.
- Combine dry ingredients. Then add to butter mixture alternately with buttermilk. Fold in lemon zest.
- Place batter in prepared loaf pan and bake for 1 hr 15 minutes.
- While bread is baking prepare glaze.
- Mix lemon juice & powdered sugar. Whisk together until smooth. Cover until ready to use.
- Once loaf is finished cooking, allow to cool for 20 minutes before removing from pan. Allow to cool for 30-40 minutes before glazing.
