Lemon Bread

Ingredients

  • 3/4 c butter room temp
  • 1 1/2 c sugar
  • 3 eggs
  • 2 1/4 c all-purpose flour
  • 1/4 tsp salt
  • 1 tbsp baking powder
  • 3/4 c buttermilk
  • Zest of one lemon
  • 2 tbsp fresh lemon juice
  • 1 c powdered sugar

Instructions

  • Prep 9x5x3 inch loaf pan with butter & flour. Preheat oven to 325
  • Cream together butter & sugar. Once well combined, add eggs one at a time.
  • Combine dry ingredients. Then add to butter mixture alternately with buttermilk. Fold in lemon zest.
  • Place batter in prepared loaf pan and bake for 1 hr 15 minutes.
  • While bread is baking prepare glaze.
  • Mix lemon juice & powdered sugar. Whisk together until smooth. Cover until ready to use.
  • Once loaf is finished cooking, allow to cool for 20 minutes before removing from pan. Allow to cool for 30-40 minutes before glazing.
