Well friends, today is nothing like I had expected. And I am sure it is not anything like you had expected either. What I will say during this uncertain time we face is this. And I will do my best to guide you to delicious food as we are bound up in our homes for the foreseeable future. With that being said, I would love to share with you my recipe for No Chop Crockpot Mexican Chicken. It is a flavor packed recipe. And it is super versatile. You can use this chicken as a topping for nachos, a filling for tacos or burritos. You could even roll it into enchiladas and pour a white cheese sauce over the top.
The key difference in this recipe is I selected ingredients that did not require prep. Ingredients like pre-chopped peppers and onions, fresh salsa, and fresh chicken breasts. I was hoping you could use this recipe on a busy weekday to help make a delicious meal without all of the chopping. And in the future, you can do that. For now, as we face this Covid-19 virus I want to tell you a few ways you can adapt this recipe to ingredients you may have on hand.
Recipe Substitution Chart
*3 lbs boneless chicken breasts-whatever chicken you have on hand
*16oz package of peppers and onions – ½ cup diced onions & ½ cup diced peppers or 1 cup diced onions
*3/4 cup taco seasoning-3 packets of taco/fajita seasoning
*16 oz fresh salsa-whatever salsa you have on hand/10oz can of Rotel Tomatoes

No Chop Crockpot Mexican Chicken
Equipment
- Slow Cooker
Ingredients
- 3 lbs boneless skinless chicken breasts
- ¾ cups taco seasoning
- 1/8 cup cumin
- 16 oz package chopped peppers onions frozen
- 16 oz fresh salsa medium
Instructions
- Place chicken breasts in bottom of slow cooker
- Spread taco seasoning evenly over chicken
- Sprinkle in cumin
- Top with peppers and onions. Spread salsa evenly over top.
- Cook on low for 6 hours or high for 3-4.
- Remove chicken to a plate to shred with 2 forks. Add chicken back to slow cooker and mix with sauce.
- Use seasoned chicken as a topping or filling for nachos, tacos, or burritos.
- Add any toppings your family will enjoy such a more salsa, sour cream, shredded cheese, and avocado
