Pan Fried Fish

Yesterday, my dad gifted us with a container of Walleye filets. When he did, I just could not wait to share my Pan Fried Fish recipe with you. I grew up eating fish this way. I don’t prepare it like this often, but that makes it such a treat when I do!

Equiptment Required

I like to use my 12″ Lodge Cast Iron pan to fry the fish. In addition to that you will need 3 long, deep bowls for your breading station. I prefer the 3 step breading because it produces a more crisp crust than a one step process.

Type of Fish

I recommend using a firm, mild fish for this recipe. Like I said before, my dad gifted us some Walleye filets. However, if you would like, you can use Talipa or Flounder for your Pan Fried Fish. Either will give you nice results without being too delicate to work with.

The technique is simple. Just remember to wait to put your fish into the oil until it is hot enough. I recommend dropping a small amount of breading into the hot oil. If it sizzles, the oil is ready.

Ingredients

  • 2 lbs firm mild fish filets (I used Walleye)
  • All-Purpose Flour
  • 2-3 eggs
  • Cornmeal
  • Cajun seasoning
  • Salt

Instructions

  • Season fish filets with Cajun Seasoning and set aside.
  • Prepare your breading station. Place flour in one bowl, eggs in another, and cornmeal in the third.
  • Start breading your fish by coating filets with flour. Shake off excess and then dip into beaten eggs. Immediately dip into cornmeal. Finally, place prepared filets on clean plate. Repeat with all fish filets.
  • Place 12” cast iron skillet on stove over medium high heat. Place oil in pan to cover bottom. Oil will expand as it heats up.
  • Test temperature of oil by dropping a small piece of batter into oil. If it sizzles the oil is ready.
  • Place fish filets in the oil. Make sure not to overcrowd pan. Cook 4-5 minutes before flipping. After 4-5 minutes check bottom to see if fish is golden brown. If so, flip each piece to cook on other side.
  • Once second side is finished cooking, remove to plate lined with paper towel. Salt immediately. And serve
