Season fish filets with Cajun Seasoning and set aside.
Prepare your breading station. Place flour in one bowl, eggs in another, and cornmeal in the third.
Start breading your fish by coating filets with flour. Shake off excess and then dip into beaten eggs. Immediately dip into cornmeal. Finally, place prepared filets on clean plate. Repeat with all fish filets.
Place 12” cast iron skillet on stove over medium high heat. Place oil in pan to cover bottom. Oil will expand as it heats up.
Test temperature of oil by dropping a small piece of batter into oil. If it sizzles the oil is ready.
Place fish filets in the oil. Make sure not to overcrowd pan. Cook 4-5 minutes before flipping. After 4-5 minutes check bottom to see if fish is golden brown. If so, flip each piece to cook on other side.
Once second side is finished cooking, remove to plate lined with paper towel. Salt immediately. And serve
