Southwest Avocado Lime Slaw
So, a few weeks ago some friends from church asked us over for dinner. You know how it goes, I asked “What can I bring?” And their answer was “Something to go with fish tacos” and Ta Da! Southwest Avocado Lime Slaw was born. I personally like a lightly dressed slaw that allows the natural flavors and textures of the ingredients to shine through. This recipe does all of those things.
When you read the ingredient list, don’t let the number of ingredients scare you away. It really isn’t that much. And the honey doesn’t make it sweet. It is just there to balance the tartness of the lime. I promise, this will be a favorite with any Southwest or Mexican dish you prepare!
Southwest Avocado Lime Slaw would actually be amazing with my Instant Pot Pork Carnitas. The fresh flavors shine through in both and would pair so well! Try them both today!
You will see in my video that I use a melamine bowl with a tight-fitting lid. This is one of a set of five nesting bowls that have become some of my new favorites. They are perfect for taking a dish to a friend’s house. No worries about breaking your favorite serving bowl! Amazon a set almost identical to mine and I am in LOVE! The Pioneer Woman Country Garden set. You will find you use this set over and over. I will also confess, I stick these in the dishwasher. I have decided, when they die, I will buy more. Life is too short!
