Southwest Avocado Lime Slaw

This south of the border inspired slaw is the perfect side for your fish tacos or other Southwest meal!

Ingredients

  • 1 16 oz bag coleslaw mix w/ carrots
  • ¼ cup red onions diced
  • 1 tbsp cilantro minced
  • 1 lime juiced & zested
  • 2 tbsp mayonnaise
  • ½ avocado mashed
  • 1 ½ tsp honey
  • 2 tsp water
  • ½ tsp cumin
  • ¼ tsp salt
  • ¾ tsp ancho chili powder

Instructions

  • In a bowl with a tight-fitting lid, zest and juice one lime.
  • Add 1/2 of avocado mashed to bowl.
  • Add honey, water, and spices. Whisk until smooth
  • Mix in coleslaw mix, onions, and cilantro. Fold dressing into coleslaw mix.
  • Place lid on bowl and shake.
  • Remove lid and stir again. Repeat if you feel it needs more mixing.
  • This slaw is lightly dressed. I you like a more heavily dressed slaw you can double the dressing recipe.
