Squash Pickles from Grill of Victory

During the first round of my episode, I made Squash Pickles from Grill of Victory. They are the perfect compliment to a rich burger. This is a super simple recipe. It is actually a quick pickle that is finished in the time it takes to cook your Bayou Burger from Grill of Victory.
If You Have Never Pickled Vegetables
Don’t be afraid to try this quick pickle method. Quick Pickling vegetables is super simple and only requires a few ingredients. All you need is water, vinegar, sugar, salt and spices. You bring these to a boil and pour them over your vegetables. These can be made inside on your stovetop or on your grill. All you need to do is boil your brine and pour it over your prepared vegetables. No need to heat further.
Vegetables
For the Squash Pickles from Grill of Victory we actually use three vegetables. I recommend using young, small yellow squash, a small white onion, and a red bell pepper. You can make these few days ahead and keep them in a jar in the refrigerator. They will last about 2 weeks.
Spices
If your grocery store carries pickling spices, you can cheat and use those instead of mixing your own. Otherwise, follow my recipe below for the proper blend of allspice berries, coriander, crumbled bay leaves, whole cloves and mustard seeds.
The Flavor
The flavor of the Squash Pickles from Grill of Victory will remind you of a Bread-and-Butter pickle. It has that vinegar flavor that you expect from a pickle but it also has a subtle sweetness. They contrast so nicely with the salty fat of the bacon on the Bayou Burger from Grill of Victory. These pickles make it the total package. They are also delicious on Grilled Chicken.
Squash Pickles from Grill of Victory
Ingredients
- 2 yellow squash sliced thin
- 1 small white onion sliced thin
- 1/2 red bell pepper sliced thin
- 1 cup water
- 1 cup white vinegar
- 1 1/2 tsp salt
- 1/4 c sugar
- 1/2 tsp allspice berries
- 1 tsp whole coriander
- 1/2 crumbled bay leaf
- 1 whole cloves
- 1 tsp mustard seeds
Instructions
- Slice vegetables thin using a mandolin.
- Place vegetables in heat safe bowl.
- Heat water, vinegar, sugar, salt and spices over medium high heat until salt and sugar dissolve.
- Pour brine mixture over prepared vegetables. Cover bowl with plastic wrap and allow to rest at least 15 minutes.
- Stir vegetables to allow spice to fall to the bottom of bowl before serving.
- Serve immediately
