Squash Pickles from Grill of Victory

This quick pickle recipe can be used on a variety of vegetables and adds a lovely sweet and sour bite to any meal.

Ingredients

  • 2 yellow squash sliced thin
  • 1 small white onion sliced thin
  • 1/2 red bell pepper sliced thin
  • 1 cup water
  • 1 cup white vinegar
  • 1 1/2 tsp salt
  • 1/4 c sugar
  • 1/2 tsp allspice berries
  • 1 tsp whole coriander
  • 1/2 crumbled bay leaf
  • 1 whole cloves
  • 1 tsp mustard seeds

Instructions

  • Slice vegetables thin using a mandolin.
  • Place vegetables in heat safe bowl.
  • Heat water, vinegar, sugar, salt and spices over medium high heat until salt and sugar dissolve.
  • Pour brine mixture over prepared vegetables. Cover bowl with plastic wrap and allow to rest at least 15 minutes.
  • Stir vegetables to allow spice to fall to the bottom of bowl before serving.
  • Serve immediately
