Strawberry Rhubarb Cobbler
Welcome Spring in East Tennessee. I am not sure about where you live, but here in East Tennessee the flowers are blooming, the birds are singing, and I just found Rhubarb at the grocery store! It immediately brought to mind my grandmother making pies for me when I was a little girl. With her in mind I wanted to simplify things just a bit and create for you a Strawberry Rhubarb Cobbler. You see, my mother always made this simple cobbler recipe when I was growing up. And I was thinking we could just join the two!
Now Rhubarb is technically a vegetable. However, here in the south I have always seen it used in a dessert of some sort. It adds a tart, tangy flavor to whatever fruit you pair it with. And for me, THAT IS THE BEST THING EVER! I personally love a little zing of sour. And this dessert is perfect with a scoop of vanilla bean ice cream!
Now if you are not familiar with Rhubarb it will be long red stems that look like red celery without leaves in your grocery store or at your local farmers market. If you ever decide to grow it at home, please know that you cannot eat the leaves, just the stems. Here is a picture so you have an idea what we are talking about.
As my children were growing up, I tried to expose them to so many different fruits and vegetables to expand their palette. And I always told them they needed to eat from all the colors of the rainbow. That is how they would get all of the vitamins and minerals they needed to grow healthy and strong. The vibrant red of the strawberries and rhubarb in this recipe just make me happy! I figure it is a stretch to say a dessert is healthy but we can say it makes our heart glad!
Like I said earlier, when I was perfecting the Strawberry Rhubarb Cobbler, I drew inspiration from my mother’s cobbler recipe as well. She used this basic cup, cup, cup recipe for many different cobblers when I was a child. Now the one I remember the most fondly was when wild blackberries would be in season. If you ever have the chance to try that, DO IT! They are so much better than tame berries. And their seeds are smaller. Plus, they have that zing of tartness like the rhubarb! Other fruits to consider are peaches, raspberries, and blueberries!
Strawberry Rhubarb Cobbler
Ingredients
- 4 tbsp butter
- ¼ cup sugar
- 1 ½ cup rhubarb
- 1 cup strawberries
- 1 tsp lemon juice
- 1 cup self-rising flour
- 1 cup sugar
- 1 cup milk
Instructions
- Preheat oven to 425 degrees.
- Place 4 tbsp butter in 8×8 casserole dish and place in oven for 8-10 minutes while you prepare rhubarb and strawberries.
- Chop rhubarb into ½ inch chunks and clean and chop strawberries.
- Place fruit in a small bowl. Mix with lemon juice and ¼ cup of sugar.
- Mix four, sugar and milk in medium size bowl.
- Remove casserole dish from the oven. Pour batter into hot butter and pour fruit mixture into center of batter making sure to spread fruit throughout dish.
- Return casserole dish to oven and reduce heat to 350 degrees.
- Bake for 50 minutes.
