Ultimate Valentines Dinner In: Butter Basted Steak

This Ultimate Valentines Dinner In: Butter Basted Steak is the perfect way to say "I Love You". And you don't need a grill to do it!
Can you hear the sizzle???

For your main dish element in your Ultimate Valentines Dinner In. I wanted to show you an alternative to grilling your steak. My recipe Ultimate Valentines Dinner In: Butter Basted Steak will show you how simple it is to prepare steak in your kitchen without a grill. With something as simple as a 12″ cast iron skillet you can prepare one of the most savory and flavorful steaks you have ever eaten. I am partial to Lodge brand myself. Lodge is affordable and they are made in Tennessee.

Now, for your Ultimate Valentines Dinner In: Butter Basted Steak you will want to make sure that you lay your steaks out 30 minutes before you plan to cook them. This insures that they are not too cold inside and they cook more evenly. You will season them with a simple mixtue of garlic, salt, and black pepper. Then set them aside while you get your pan ready.

This recipe calls for 1″ thick sirloin steaks, salted butter (I love Kerrygold), and olive oil. From here it is all about timing. You want your skillet hot and you only want to cook your steaks for about 4 minutes on each side. Once you flip your Ultimate Valentines Dinner In: Butter Basted Steak you will want to baste them with the pan drippings a few times. You can baste them 2-3 times while they cook on the second side. You can watch all of this in my demonstration above.

  • 4-6 tbsp salted butter
  • Olive oil
  • 6 ” spring of fresh rosemary
  • 12 ” cast iron skillet

Instructions

  • Lay steaks out on plate for 30 minutes before your plan to cook them. This allows the center of the meat to warm slightly before you cook it.
  • Mix your garlic, salt and pepper. Season both sides of your steak and set them aside while you prepare your side dishes.
  • Once all of your dishes are ready to cook heat your cast iron skillet over med-high heat.
  • You pan is ready to cook when it is uncomfortable to hold your hand 4” above the surface of the pan.
  • Add equal parts butter and olive oil. Add your rosemary sprig as well.
  • If you are cooking the other in the Ultimate Valentine’s Dinner In meal put your vegetables in the oven
  • Add your steaks to your skillet and do not move them for 4 minutes.
  • After 4 minutes flip your steaks with tongs. Using an oven mitt tilt your pan so that all of the butter/olive oil mixture flows to one edge. Using a spoon, spoon this butter blend over your steaks 3-4 times each steak.
  • Place your pan back down on the heat and do not move the steaks for another 4 minutes.
  • You can baste your steaks 2-3 times, but only cook you steaks for a total of 4 minutes on each side.
  • Using a meat thermometer check the internal temperature of your steak. It needs to read at least 125 degrees or above before you remove it from the heat. It will continue to cook once it is on the clean plate to rest. This method should result in a medium rare steak.
  • Allow your steaks to rest for 10 minutes before cutting.

Once your steak is finished cooking you will want to allow it to rest on a plate for at least 10 minutes. This will give you time to plate your Ultimate Valentines Dinner In: Side Dishes. The pancetta wrapped asparagus and the oven roasted campari tomatoes are a beautiful compliment to the Butter Basted Steak.
