Equipment

  • 12" Cast Iron Skillet

Ingredients

  • 2 1-inch thick sirloin steaks
  • 1 tsp granulated garlic
  • 1 tsp salt
  • 1 tsp fresh ground black pepper
  • 4-6 tbsp salted butter
  • Olive oil
  • 6 ” spring of fresh rosemary
  • 12 ” cast iron skillet

Instructions

  • Lay steaks out on plate for 30 minutes before your plan to cook them. This allows the center of the meat to warm slightly before you cook it.
  • Mix your garlic, salt and pepper. Season both sides of your steak and set them aside while you prepare your side dishes.
  • Once all of your dishes are ready to cook heat your cast iron skillet over med-high heat.
  • You pan is ready to cook when it is uncomfortable to hold your hand 4” above the surface of the pan.
  • Add equal parts butter and olive oil. Add your rosemary sprig as well.
  • If you are cooking the other in the Ultimate Valentine’s Dinner In meal put your vegetables in the oven
  • Add your steaks to your skillet and do not move them for 4 minutes.
  • After 4 minutes flip your steaks with tongs. Using an oven mitt tilt your pan so that all of the butter/olive oil mixture flows to one edge. Using a spoon, spoon this butter blend over your steaks 3-4 times each steak.
  • Place your pan back down on the heat and do not move the steaks for another 4 minutes.
  • You can baste your steaks 2-3 times, but only cook you steaks for a total of 4 minutes on each side.
  • Using a meat thermometer check the internal temperature of your steak. It needs to read at least 125 degrees or above before you remove it from the heat. It will continue to cook once it is on the clean plate to rest. This method should result in a medium rare steak.
  • Allow your steaks to rest for 10 minutes before cutting.
