Preheat your mini waffle maker.
Peel and thinly slice your apples.
In a medium size bowl, mix your cake mix and pumpkin pie spice.
Add your eggs, milk and cooled, melted butter. Mix well.
Separate ½ of your waffle batter into another bowl and place in the refrigerator while you make your first round of waffles.
Spray your waffle maker with non-stick spray, place a couple of tablespoons of batter on the waffle maker, top with 3 slices of apple, and top with more waffle batter. Close your waffle maker and wait for waffle to cook.
When waffle is finished cooking move to a cooling rack or serve immediately with maple syrup and powdered sugar.
Repeat until you have used all of the batter.
