Homemade Andouille Sausage
Make your own Andouille sausage at home with this simple recipe!

- 1 lb ground pork
- 2 cloves garlic minced
- 2 tsp smoked salt
- 1 ½ tsp paprika
- ½ tsp black pepper
- ½ tsp red pepper
- ½ tsp cayenne pepper
- 1/8 tsp thyme
- 1/8 tsp allspice
- 1/8 tsp chili powder
- 1/8 tsp sage
- ½ tsp ground/crushed bay leaves
Mince garlic. Measure all of your spices into a small bowl.
Mix garlic and spices with your ground pork.
Cover sausage with plastic wrap and place in refrigerator to chill for a few hours.
