Homemade Andouille Sausage

Make your own Andouille sausage at home with this simple recipe!

Ingredients

  • 1 lb ground pork
  • 2 cloves garlic minced
  • 2 tsp smoked salt
  • 1 ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp red pepper
  • ½ tsp cayenne pepper
  • 1/8 tsp thyme
  • 1/8 tsp allspice
  • 1/8 tsp chili powder
  • 1/8 tsp sage
  • ½ tsp ground/crushed bay leaves

Instructions

  • Mince garlic. Measure all of your spices into a small bowl.
  • Mix garlic and spices with your ground pork.
  • Cover sausage with plastic wrap and place in refrigerator to chill for a few hours.
