Strawberry Rhubarb Cobbler

Ingredients

  • 4 tbsp butter
  • ¼ cup sugar
  • 1 ½ cup rhubarb
  • 1 cup strawberries
  • 1 tsp lemon juice
  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk

Instructions

  • Preheat oven to 425 degrees.
  • Place 4 tbsp butter in 8x8 casserole dish and place in oven for 8-10 minutes while you prepare rhubarb and strawberries.
  • Chop rhubarb into ½ inch chunks and clean and chop strawberries.
  • Place fruit in a small bowl. Mix with lemon juice and ¼ cup of sugar.
  • Mix four, sugar and milk in medium size bowl.
  • Remove casserole dish from the oven. Pour batter into hot butter and pour fruit mixture into center of batter making sure to spread fruit throughout dish.
  • Return casserole dish to oven and reduce heat to 350 degrees.
  • Bake for 50 minutes.
