Apple Brandy Bundt Cake

This old-fashioned apple cake is filled with fall flavors and memories too!

Ingredients

  • 1 ½ cups unsalted butter softened
  • 2 cups sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 3 tsp baking powder
  • 1 tsp salt
  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • 2 cups apples peeled & finely chopped
  • 1 cup pecans chopped
  • ½ cup raisins soaked in apple brandy and drained
  • Glaze ingredients
  • ½ cup apple cider
  • ½ cup apple brandy
  • ¼ cup brown sugar
  • 2 tbsp butter

Instructions

  • Preheat oven to 325 degrees. Prepare Bundt pan or tube pan with butter and flour.
  • Mix together butter and sugar until light and fluffy.
  • Slowly add eggs to butter mixture one at a time. Follow with vanilla.
  • In a separate bowl mix dry ingredient.
  • Then add dry ingredients in batches to wet ingredients. Batter will be thick like a pound cake.
  • Fold in apples, pecans, and raisins.
  • Bake in preheated oven for 1 hour 10 minutes.
  • When cake is finished baking, allow to cool for 20 minutes before removing from pan to cool completely.
  • Prepare glaze while cake cools.
  • Place small saucepan on stove. Mix together glaze ingredients and bring to a simmer. Allow to cook until all sugar is dissolved. Turn off heat and wait to pour over cake until you have cake on serving dish you plan to use. Glaze makes cake moist and delicate!
