Preheat oven to 400 degrees. Spray 8x8 glass or ceramic dish with cooking spray.
Wash sweet potatoes and bake on sheet tray for 1 hour until cooked through.
After an hour remove potatoes from the oven. Once they are cool enough to handle. Peel them and place in a medium size bowl and mash.
Add 2 tbsp butter, marmalade, brown sugar, salt, and ginger to sweet potatoes and mix well.
Place sweet potato mixture in prepared dish.
Reduce oven temperature to 350 degrees.
In microwave safe bowl, melt 1 ½ tbsp butter.
Add marshmallows to melted butter. Mix and melt in microwave in 30 second increments as needed to make smooth.
Add Cereal and mix. Top sweet potato mixture with cereal mixture. Spread evenly.
Bake for 10 minutes. Serve
