Easter Almond Cake with Almond Buttercream Icing
As Easter approaches, I want to share a delicious Easter Almond Cake with Almond Buttercream Icing recipe with you. What began as a simple white almond cake, is transformed into this spring beauty! With the help of a few bottles of gel food color and a bottle of pastel sprinkles I was able to create a fun Easter Cake and Cupcakes.
Don’t let cake and cupcake decorating intimidate you. I am not a professional by any means, but I will share my secret with you. Invest in a large star tip, gel food colors (if you want colored icing), and sprinkles. I have found that sprinkles make a cake look more professional and they hide a multitude of flaws in decorating.

When I was decorating my Easter Almond Cake with Almond Buttercream Icing, I made three different colors of icing. I iced the base of the cake in white icing. Then I dabbed the different colors around the cake. I used a board scraper to drag the colors around the cake to create the striations around the cake. Finally, I took the three colors of icing and added them to one piping bag with the large star tip. I used this to create rosettes along the top of the cake. To top it off I sprinkled the cake with pastel sprinkles.
As far as the cupcakes go, I used a toothpick to put some gel food color (3 different colors) on the inside of the piping bag. Then I added the white buttercream icing. I was not as happy with the color effect on these. I would prefer the method above when I do them again. However, as I said before, sprinkles and bunny ears make all the difference!

I find Amazon to be faster for some of these things so here are some links that might help if you don’t live close to a Hobby Lobby. The Gel food colors are necessary when adding color to your icing. You do not want to add excess liquid to your Almond Buttercream Icing. The thing to remember when using any food color is to find the color you are trying to achieve. You cannot mix colors to make the color you want. You can make a light yellow out of yellow, but trying to mix for a specific color is not really successful. These gel food colors by Wayin Brand in the Vibrant color set are perfect for the Easter Almond Cake with Almond Buttercream Icing. At $12.99 they are also a great value.
For decorating I mentioned that I use the Large star tip. It is actually the 1M from Wilton. And I just put it in the end of a large disposable piping bag. (cut the tip off of course)
Celebakes on Amazon has a Tiny Pastel Non-Pareils mix that is almost identical to the mix I used on my cake. Now for my cupcakes I made a hole in the center of my cupcakes and hid sprinkles inside and then added more on the top. This fun Easter Sprinkle mix from Sweets Indeed on Amazon would be perfect for both!
Easter Almond Cake
Ingredients

- ¾ butter softened
- 2 cups sugar
- 6 eggs whites
- 1 tsp almond extract
- Sift together:
- 3 1/2 c AP flour
- 3 tsp baking powder
- ½ tsp salt
- 1 1/3 c milk

- Prepare your cake pans by buttering the bottom and sides. Dust your pan with flour and shake out excess. Preheat oven to 350 degrees.
- Cream together butter and sugar with a mixer.
- Add egg whites slowly, incorporating them well. Add Almond extract now as well. Mix well.
- In a large bowl sift together flour, baking powder, and salt.
- Alternate adding flour mixture and milk to butter mixture. Mixing well after each addition.
- Here is a chart for filling your pans depending on the size cake you decide to make.
- Size pan cups batter bake time
- 6” round 2 1/4c 35-40min
- 8” round 4c 37-42min
- 9” round 5c 40-45min
- Cupcakes 30-35min

Almond Buttercream Icing
Ingredients
- 1 c unsalted butter softened
- 3-4 c confectioner’s sugar
- 2 tsp almond extract
- Pinch salt
- 2-3 tbsp heavy cream or half and half
Instructions
- Whip softened butter with a mixer until light and fluffy. The longer you whip it, the lighter it will be in color. (My goal was nearly white)
- Add confectioner’s sugar alternately with extract and cream. Mixing well after each addition Until you get a good spreadable consistency.
- I doubled this recipe for my Easter Almond Cake. If you like thick icing you might want to triple it.
